Beef Stew!!

Beef Stew

The cold brings out the best soups and stews season...Brrrrrrr! My beef stew is delicious full of flavor and low in calories. Can't beat that with a stick...

I usually use beef chuck roast and cut it up myself because buying stew meat costs more because of the convenience of it being cut up. 

Ingredients:
Yukon Gold Potatoes 1 to 2 lbs peeled and quartered
Celery 1 pkg. washed and quarter. ( Do not use the ends or the leaves in stew it will sour it.)
Carrots ( Pre- Boil ) so they are 1/2 ...

Potato Bacon Soup!!!

Potato Bacon Soup

Fall is here and so is soup season,,, today's soup is Potato Bacon,,, Yummy and full of creamy goodness.
Made with 1/2 & 1/2 and chicken stock it is one of my fav's with a good dunking bread...Beverage of choice a cup of hot spiced apple cider and your have a meal. If you fill extra ambitious you could even add a Candied pecan /bleu cheese salad with Balsamic dressing. Really what's not to like? 

If you like more veggies in your soup you can add a can of organic corn bits and 1...

Chicken Pie!

Meat pies are very popular in Europe, here they are okay, but most do not make anything special.

I decided to change that!

Pictured is a Chicken Pie, loaded with organic chicken breast chunks, fresh peas, carrots, green bean, and even corn.

I make my gravy with cream, butter and cream of chicken soup with a dash of this and that.

The crusts are organic too, but not made by me, I forgo that for someone else to do as long as the quality is good.

Where is SPRING?

This is my Hearty Chicken Soup, my Mother told me when I was a little girl it could cure anything!
Of course I believed her, but I wish it could also change things too like this weather. Yuck.:(
It has gone from Bad to Worse with Frozen Rain yesterday and that Wind it made your Bones hurt!

All I could do was make Yes a hot delicious Ginger Bean Soup for dinner with a Hot Ham & Avocado sandwich, it was Yummy and good for me too but I would of Loved to be eating a big slice of Watermelon and a Col...

Pasta Soup!

"Picture this," as Estelle Getty from Golden Girls use to say before she went into her story!

Soup is always on my menus when I prepare food for my clients. 
It adds balance to a meal and can also be a meal when they are as Hearty as the one pictured above.
This soup has a rich red sauce, fresh zucchini,carrots,chunk tomatoes, and  egg noodles.
Added a little semi - sweet red wine and  good amounts of Italian seasonings.
Simmered for 6-8 hours and let the flavors come together and HMMMMMMMM...

"Moroccan Lentil Soup" 

The weather is warming up slowly, but soup is good anytime. A bowl of hearty soup a slice of artsian bread 
paired with a salad and you have a complete meal... So without further adieu' here is my recipe for Moroccan Soup.


Ingredients:
2+onions chopped
2+ cloves of garlic or (Minced in Jar too)
1 tsp. ginger
6 cups water
1 cup of red lentils
1 (15 oz)can of garbanzo beans,drained
1 (19 oz.) can of cannellini beans
1 14.5 oz) can of Hunt's diced tomatoes
