
Asparagus & Cranberry Salad

Ingredients:
4 washed portabello mushrooms sliced thin
4 washed spears of asparagus chopped in 1/4 slices
1/4 cup of dried cranberries
1/4 cup of diced onion
2-3 cups washed spinach or Romain lettuce
Dressing:
1/4 tsp. of ground dry mustard
3 tbsps. of red wine vinegar
1tsp. of sugar
dash of sea salt
3tbsps.of olive oil
Put the above in glass jar with lid and shake till blended.
Taste mixture to make sure it has enough tart sweet taste, if not add more of above mixture to get your preferred taste
Pour over salad mix toss all together till all of lettuce is covered.
Optional Add On's:
Crisp Bacon crumbled
Blue Cheese crumbles
Sliced Hard boiled eggs
Meats Ham, Salami, Turkey or Chicken
Serve with a crusty bread or a semi sweet raisin bread and spread of course with butter what else!

It is filling and low in calories, and can be a nice Vegetarian dish as well.
