This is my Hearty Chicken Soup, my Mother told me when I was a little girl it could cure anything!Of course I believed her, but I wish it could also change things too like this weather. Chicken Soup, has been said to cure almost anything? Fact or Fiction? Maybe it's the comfort that makes Us feel better or maybe it's the memories attached to the soup.  Vegetable Beef Soup By Chef Gianna Good soup starts with a good stock, or as laymen would say a good foundation. This soup pictured started out as a pulled beef recipe and I always make extra because you can turn it into something else later on.

  Cold weather, makes us do layering.
In the food business it makes us start thinking about Hearty Warm Meals!
The one I have pictures of above is a Italian Chicken Stew served over Bow-tie Garlic Pasta.
Made with a Red wine red sauce and lots and lots of chicken, carrots,
and celery this one served with my crusty bread is a Winner!
It is high in flavor, fiber, anti-oxidants, vitamins, and very LOW in CALORIES....!

Vegetable Soup
 Divadish
& Chef Gianna love, the Farmers Markets. Fall vegetables are still
in abundance and there are so many wonderful choices.
The picture here is just one thing you can make from a good red sauce, and fresh market vegetables.
My freezer would not be Happy if it does not have at least (6-10 )
quarts of soup frozen and waiting to be pulled out for any accompaniment
to a meal or as the whole meal, of course with my crusty bread &

The leaves are changing color, the daily temperatures are getting cooler, and you can definitely smell Fall in the air.

in Minnesota, we start to think about different warm foods to fill us
up.Or as I like to say put on our food layers so we don't feel the Cold!

 My mother use to make a big pot of chicken soup at least once a month when we were kids growing up out East.
She would always say it can cure everything, if you are a little anemic, it helps, if you are a little fluish it helps,
and if you are just plain hungry it fills you up!
No my mother was not Jewish, but she could of been, she had the mannerisms and definitely the hand movements.

Soup time!
"Picture this," as Estelle Getty from Golden Girls use to say before she went into her story!
Soup is always on my menus when I prepare food for my clients.
It adds balance to a meal and can also be a meal when they are as Hearty as the one pictured above.
This soup has a rich red sauce, fresh zucchini,carrots,chunk tomatoes, and egg noodles.
Added a little semi - sweet red wine and good amounts of Italian seasonings.
Simmered

Creamy/Chicken Soup W/Egg Noodles !
Just like my Great-Grandma used to make, except better, because I put more delicious ingredients in it.. Times were tough over 100+ years ago...! Big Chunks of Chicken, loads of veggies, creamy chicken gravy slowed cooked over a 10+ hours, gives you one smooth tasting Chicken/Soup. I usually add the egg noodles after everything is all cooked and flavors are completely blended. With the cold snap hitting this weekend this will definitely be a winner with my family.
