Chicken Pie!

Meat pies are very popular in Europe, here they are okay, but most do not make anything special.

I decided to change that!

Pictured is a Chicken Pie, loaded with organic chicken breast chunks, fresh peas, carrots, green bean, and even corn.

I make my gravy with cream, butter and cream of chicken soup with a dash of this and that.

The crusts are organic too, but not made by me, I forgo that for someone else to do as long as the quality is good.

This is one of my Sunday's dinners. My parents both were big pasta eaters, but the sauce is what made that pasta just go down so much more. The red sauce was cooked for hours and it was made fresh with all the right seasonings, leftover meats and yes plenty of cheese & wine added to the slow simmering sauce. Steaks

The one thing about being a chef is basically you can fix anything you want for dinner.
The above meal is one of those I feel like it meals.

Ever have that Meat Craving,,, ? if so this meal will satisfy it.....!

Here is how I made my steak.

First select a good quality Sirloin -Tip Steak, 2-3" thick watch out for veining, because those make the steak tough.
Always use hormone -Free meat and free range Black-Angus, that way the meat is pretty much guaranteed to be tender and healthier for y...

Berry-Wine Chicken & Parmesean Potatoes

Divadish Loves too cook with Wines... Why,, because you can sip a little out of the bottle too!!! Just kidding......!

No, really, the taste that wines add to the flavors of meats, soups, sauces, and salad dressings, is Phenomenal!!!
Combine all of that with special blends of seasoning and you have a Winner each and every time.
The above picture is just one particular winner.

Pasta Soup!

"Picture this," as Estelle Getty from Golden Girls use to say before she went into her story!

Soup is always on my menus when I prepare food for my clients. 
It adds balance to a meal and can also be a meal when they are as Hearty as the one pictured above.
This soup has a rich red sauce, fresh zucchini,carrots,chunk tomatoes, and  egg noodles.
Added a little semi - sweet red wine and  good amounts of Italian seasonings.
Simmered for 6-8 hours and let the flavors come together and HMMMMMMMM...

Ginger Steak & Edamame Beans
Comfort Food:
Whole grain rice, flank steak,edamame (soybeans) and a little fire added to round out this yummy dish.
When I plan my evening dinners I always , always spice things up a notch.
Why?
Because the heat of spices are very good for your body.
How?
It breaks down our cholesterol,and buildups in our arteries.
It also adds flavor and we use less salt because it is not needed.

Spaghetti Bolognese

Spaghetti Bolognese
This is one of Divadish's all time favorite comfort foods!
It is rich, full of tender meats, and it is definitely one to Lust for!
The sauce is thicker , because it has tomato chunks in it and chopped onions.
The combination's of simmered meats, and a special mix of seasonings, and letting it slow cook for over 8+ hours gives this dish it's rich but delicate taste.
For this particular  recipe I used Flank steak & 93% ground chuck.
